Today’s challenge is to share some of your favorite healthful recipes with your fellow DietBetters. I love to cook and have been super busy working on a Healthful Potluck Favorites recipe guide for the Buffalo County Community Partners Community Building Block Party toolkits. Mini Strawberry-Rhubarb Crumbles
Good things come in small packages. Babies, sliders, miniature pinschers, debt . . . Just be sure to share some of these little guys!
1 pint strawberries, quartered
1 lb. rhubarb, cut into 3/4-inch pieces
1/2 cup honey
1/4 cup + 2 Tbsp whole wheat flour
1/4 cup cold butter, cut into pieces
1/4 cup brown sugar
1/2 cup old fashioned oats
1/2 tsp cinnamon
1. Preheat oven to 350 degrees. Combine strawberries, rhubarb, honey and 2 Tbsp flour. Place in ramekins or mini pie plates.
2. Combine 1/4 cup flour and butter, until crumbly. Stir in remaining ingredients and sprinkle over strawberry-rhubarb mixture.
3. Bake for 30-40 minutes, or until bubbly and fruit is tender.
